In the past, you used the white of an egg for your foam layer, which you first had to separate from the egg yolk. There are still some risks to this, however. An egg can be kept for about a week. Foamee has a shelf life of one year. An egg can become contaminated with salmonella bacteria, this cannot happen with foamee.

The costs are also much lower, for a Cocktail made with a foamee foam layer you will have to pay about 6 euro cents extra, an egg will soon cost you between 15 and 20 cents per Cocktail.
